Horchata

Horchata is a traditional Mexican beverage known for its refreshing and creamy texture. It is a type of rice-based drink that has become popular in various Latin American countries and beyond. It is often enjoyed with meals, especially during warm weather. It is also a common offering at Mexican restaurants and street food vendors.

What will you need?

  • long grain white rice
  • cinnamon stick
  • almonds
  • water
  • sweetened condensed milk
  • sugar
  • vanilla extract
  • whole milk
  • ground cinnamon, for garnish

How to make Horchata

Add the rice, cinnamon stick and almonds to a dry pan over medium heat and toast.

Add the mixture to a bowl and pour in the water. Cover with plastic wrap and let soak up to overnight.

Put the soaked rice mixture into a blender along with the condensed milk, sugar, vanilla, whole milk. Blend until smooth.

Pass through a fine mesh strainer to remove any solid bits. Mix in the remaining milk. You can use water instead if you don’t want it as creamy. Pour into a pitcher and keep in the fridge.

Pour the horchata into a glass with ice and dust with the ground cinnamon.

Ingredients

  • ½ cup (100 g) long grain white rice

  • 1 cinnamon stick, halved

  • ¼ cup (27 g) sliced almonds

  • 2 cups (480 ml) boiling water

  • 1 (14-oz [396-g]) can sweetened condensed milk

  • ½ cup (100 g) granulated sugar

  • 2 tsp (10 ml) vanilla extract

  • 2 cups (480 ml) whole milk, divided

  • Ground cinnamon

Directions

  • Add the rice, cinnamon stick and almonds to a dry pan over medium heat and toast for 2 minutes.
  • Add the mixture to a bowl and pour in the water. Cover with plastic wrap and let soak for 6 hours, and up to overnight.
  • Put the soaked rice mixture into a blender along with the condensed milk, sugar, vanilla and 1 cup (240 ml) of the milk. Blend until smooth.
  • Pass through a fine mesh strainer to remove any solid bits. Mix in the remaining 1 cup (240 ml) of milk. You can use water instead if you don’t want it as creamy. Pour into a pitcher and keep in the fridge.
  • Pour the horchata into a glass with ice and dust with the ground cinnamon.
