What will you need?
- beef tongue
- white onion
- garlic
- bay leaves
- black peppercorns
- salt
- oregeno
- whole cloves
- guajillo chiles
- better than beef bouillon paste
- beer
- your favorite salsa, for serving
- corn tortillas, for serving

How to make Lengua Tacos
Fill a large pot with water and add in the tongue along with, onion, garlic, bay leaves, black peppercorns, whole cloves, Better Than Beef Bouillon, guajillo chiles, Mexican oregano, salt, and beer. Simmer for 3 hours until the tongue is nice and tender.
Once the tongue is tender, remove from the pot and peel off the outer skin. Chop it up into small pieces or cubes and place in a bowl. Ladle a little of the cooking liquid and mix with the beef to keep it moist. Optionally you can fry the chopped tongue in a pan with a little oil to get some good crispy crust on it.
Serve with warm corn tortillas and your favorite salsa, cilantro and onion, and a squeeze of lime. Hope you enjoy!
