Chipotle Mayo

What will you need?

  • egg
  • vegetable oil
  • chipotle in adobo
  • garlic
  • salt
  • lime
  • water

How to make it

Add the egg, oil, chipotle, garlic, salt, and lime to a blender cup. Using an emersion blender, start at the bottom of the cup and blend, slowly working your way to the top until all the ingredients are emulsified and you are left with a thick delicious mayonnaise.

Spoon into a bowl and thin out with water. Taste for salt and add more if needed.

  • 1/4 cup 1/4 water, for thinning
