What Is Aguachile?
Originating from the coastal state of Sinaloa, Mexico, aguachile translates to “chili water.” Traditionally made with fresh shrimp marinated in lime juice, chilies, herbs, and crisp vegetables, it’s known for its bright acidity and spicy kick. Unlike ceviche, which often marinates for a longer period, aguachile is served shortly after the seafood is dressed, preserving its delicate texture and fresh flavor.
Why Mandarin Orange and Ginger?
Adding mandarin oranges introduces a naturally sweet citrus flavor that softens the heat without overpowering it. Their juicy brightness complements the seafood while adding a refreshing complexity.

- fresh lime juice

How to make it
Add the shrimp to a bowl and add salt and lime juice. Mix to coat and let chill in the fridge for 30 minutes.
To a blender, add cucumber, habanero, garlic, salt, mandarin orange slices, lime juice, soy sauce, and extra virgin olive oil. Blend until smooth then pass through a fine mesh strainer to discard any pulp.
Remove the shrimp from the bowl and place on a serving plate. Pour in the mandarin orange ginger sauce and garnish with mandarin orange slices, red onion, cilantro, serrano an a drizzle of extra virgin olive oil. Scoop onto a crunchy tostada. Hope you enjoy!
